- 2 lbs pork shoulder, cut into chunks
- 1 cup orange juice
- Zest and juice of 2 limes
- 1 onion, quartered
- 4 garlic cloves
- 1 tsp cumin
- Salt & pepper to taste
- Corn tortillas
- Fresh cilantro, chopped
- Quick orange-lime salsa (see below)
Instructions
- Toss pork with orange juice, lime zest and juice, garlic, onion, cumin, salt, and pepper in a slow cooker or Dutch oven.
- Cook on low for 6–8 hours or until it falls apart.
- Shred and crisp in a hot skillet for that perfect taco texture.
- Serve in warm tortillas with fresh salsa and a sprinkle of cilantro.
